If you're looking for some new and typical flavors, Filipino cuisine offers a wide variety of delicious spices. Lechon Baboy (roasted pig) or “litson baboy” as the locals call it, is one of the most famous dishes in the Philippines, specifically in Cebu City. It was introduced by Spanish colonizers, and until now, it has become part of the Filipino tradition at any social gathering like weddings, birthdays, reunions, fiestas, etc.
In cooking traditional Lechon Baboy, the pig is rotated by hand on a bamboo spit over hot coals for many hours. Lemongrass and spring onions are pounded together and mixed with bay leaves, garlic, and onions. The mixture is then stuffed into the pig's cavity, and its belly is sewn shut with kitchen thread. To achieve a red and crispy skin, it is brushed with evaporated milk, ensuring the meat stays moist and the skin remains nice and crispy. It is cooked through the collaborative effort and hard work of the people involved in its preparation.
In the end, Filipino food and recipes never fail to impress with their tastes and have the ability to unite people, whether it's a simple home-cooked meal or a grand celebration.
