A Bowl of Memories: Why Adobo Will Always Feel Like Home

This dish is a reminder of home, family, and the moments we share with one another. Even if I travel or live far away someday, I know that one taste of adobo will instantly bring me back to those familiar and happy memories.

Here is one of the simplest recipes for making adobo.

• Combine ingredients
In a bowl/pot, combine the meat, soy sauce, garlic, bay leaves, and peppercorns. Marinate for 15-30 minutes if time allows (or skip straight to cooking for speed).

Sear the meat
Heat oil in a deep pan or pot over medium-high heat. Remove meat from marinade (save the liquid) and sear for 3-5 minutes until browned on the outside.

• Simmer with marinade
Pour in the saved marinade, water, and vinegar. Bring to a boil over high heat, then lower to a simmer. Do not stir for the first 3-5 minutes to let the raw vinegar taste cook off.

Reduce sauce
Cover and simmer over low heat for 15-20 minutes until the meat is tender. Uncover during the last 5 minutes and add sugar if using. You may add salt too if you prefer. Let the sauce reduce and thicken slightly. Serve hot over warm white rice.

Food has a special way of connecting us to our roots, and for me, adobo does exactly that. It reminds me that some of the best memories in life are made over a simple meal shared with the people we love. That is why adobo will always have a special place in my heart and on my plate.

Pickleball: A Fun Sport for Everyone

Have you ever heard of pickleball? This sports game is very popular in the Philippines nowadays, but Japanese people are still unfamiliar with it. It’s actually very easy to learn and is a lot of fun to play. You can imagine it as a mix of the following sports: tennis, badminton, and table tennis. 

Players use solid paddles instead of rackets and hit a lightweight plastic ball with small holes. If you’re worried about not owning the equipment, some facilities offer rental services where you can rent paddles to use. The court is smaller than a tennis court, making it easier to move around and enjoy the game.
It is easy for beginners to get started.

What I enjoy the most about pickleball is that it is exciting without being too difficult unlike other sports. The rallies can be fast, but the game is easy to understand. It also gives me a chance to exercise, improve my reflexes, and spend time with friends. Every match is different, so it never gets boring.
